🗂️ Tier/date layout + naming

The store layout that makes filing the filtering. Tier dirs stay; bucket by arrival date so the day folder is that day's arrival set.

Acceptance Criteria

Writer files notes at ~/Mail/<Tier>/<YYYY>/<MM>/<DD>/<Subject> - <Sender>.md.
The day folder equals that day's arrival set.
Filename is <Subject> - <Sender>.md (the date lives in the path, not the name).

Dependencies

Milestone gate: M17-The-Spaceship (Hero editor + LHSB) must land first.
